オートリーズは生地の何を変える?

Bread & Fermentation

This research does not establish what an autolyse rest changes in ordinary dough. The closest studies examine warm fermentation or heating-related changes, not a controlled flour-and-water rest before mixing or kneading.

One study kept a wheat-flour-and-water dough warm and observed fermentation over time, so it cannot show which effects come specifically from autolyse. Another study tracked water distribution and starch–gluten changes during heating. Those findings may be relevant to dough behavior, but they do not directly test the room-temperature autolyse technique used by home bakers.
