重曹とベーキングパウダーは膨らませ方がどう違う?

Kitchen Science

Baking soda needs an acidic ingredient to produce carbon dioxide. Baking powder already combines baking soda with leavening acids, so it can provide the acid–base reaction within the mixture. The research supports this basic difference, but the exact rise depends on the recipe and amount used.

Both work chemically by making carbon dioxide bubbles that expand the batter or dough. With baking soda, the recipe must supply enough acid—such as buttermilk—to react with it. Baking powder contains baking soda plus acids, so it is a more self-contained leavener. Studies describe baking powder increasing batter volume and porosity, while a pancake study found that buttermilk plus baking soda made pancakes taller than a milk-only control. Research has not established one universal winner for every baked good.
