Chocolate bloom is a whitish or discolored surface appearance caused by changes in its fat crystals and, in some products, migration of oils or fats followed by recrystallization at the surface. Poor tempering can promote a distinct bloom mechanism involving fat crystallization and local fat withdrawal. Tempering can reduce bloom risk by producing a more stable crystal structure, but it cannot guarantee prevention—especially when chocolate contains fillings, experiences temperature fluctuations, or has an unfavorable particle structure.
The abstracts describe more than one type of bloom. In filled chocolates, liquid fat from the filling may migrate into the chocolate shell, dissolve or disturb cocoa-butter crystals, and contribute to recrystallization at the surface. In untempered chocolate, bloom may instead result from fat crystallization that withdraws fat from around growing crystals, producing differences in composition and color. Temperature variation can also partially liquefy fat, coarsen the fat-crystal network, and promote migration. Tempering—or related pre-crystallization methods such as seeding—appears to lower the risk by improving the chocolate’s crystal structure; one abstract specifically associates poorly tempered shells with faster oil migration and bloom development. However, the evidence also indicates that composition, fillings, particles, and storage conditions affect bloom, so tempering is a risk-reduction measure rather than a complete solution.
