¿Por qué le sale floración al chocolate y la evita el templado?

Chocolate, Coffee & Drinks

Chocolate blooms when its cocoa-butter crystals or surrounding microstructure change during storage, often leaving a pale, dull surface. Tempering can greatly reduce the risk by encouraging the desirable Form V crystals, but it is not a guaranteed cure: temperature cycling, recipe differences, and sugar or fat structure can still cause bloom.

Research links fat bloom especially with cocoa butter changing from Form V toward the more stable Form VI. Tempering controls cooling and crystal formation so chocolate develops a more stable, glossy structure. However, studies also indicate that Form V alone does not guarantee bloom resistance, and factors such as microstructure, minor fats, sugar structure, and storage temperature matter. For home chocolate, tempering is therefore useful prevention, not an absolute guarantee.
