How long can dough safely cold-proof in the fridge?

Food Safety & Storage

Research here does not establish a safe maximum time for cold-proofing dough in a household refrigerator. The studies examine fermentation, dough quality, or visible mould—not a general food-safety limit in hours or days.

One study reported that dough made with a specially selected yeast strain still produced bread dough normally after a week at 5 °C, but that was a laboratory yeast experiment, not proof that ordinary dough is safe for a week. Another study assessed refrigerated-dough shelf life by watching for visible mould, but it did not provide a general cold-proofing time. So this research cannot support a reliable number for home baking. A question these papers can answer is: "How does 7% amaranth flour affect shelf life?"
