Do convection ovens really bake faster and more evenly?

Convection ovens can bake more evenly when their airflow and internal geometry are well designed, but the supplied evidence does not establish that they always bake faster. Faster baking depends on the food, temperature, oven design, loading, and how heat is distributed.
The most direct study found that improving a forced-convection oven’s fan cover improved browning performance, using agreement between simulated temperature distribution and baked-shortbread measurements as an indicator of uniformity.
