How do emulsifiers affect cake volume and crumb softness?

Emulsifiers often increase cake volume by improving batter aeration and stabilizing air bubbles, but their effects depend on the emulsifier type and concentration. Several abstracts also associate emulsifiers with softer crumb, either directly through reduced firmness or indirectly through finer, more uniform cellular structure. However, excessive or unsuitable emulsification may cause shrinkage or collapse during cooling.
