Higher fat generally makes ice cream feel creamier and smoother and helps form a fat network that supports texture. Fat also affects melting and hardness through fat destabilization and interactions with ice crystals, air cells, and the mix’s rheology. However, the sensory and consumer effects are not always large: suitable fat replacers can preserve acceptable texture, and the result depends on the formulation and storage conditions.
The supplied studies suggest that fat has both sensory and structural roles. Ice creams with 6–9% milk fat were described as creamier and smoother than lower-fat versions, while milk fat also improved resistance to texture changes during heat shock or storage. Mechanistically, fat globules partially coagulate during freezing and whipping, forming part of the structure; greater fat destabilization was associated with changes in melting rate and hardness. Lowering fat does not automatically make the product unacceptable, because ingredients such as maltodextrin, whey proteins, or fiber can partly compensate, although some replacements increased hardness, gumminess, or other textural properties.
