Ingredients & Substitutions

More milk fat generally makes ice cream seem creamier and smoother, and fat structures can reduce iciness and slow melting. Texture also depends on ice crystals, air, mix thickness, and processing, so changing fat alone does not determine the final texture.

A study comparing 0.5%, 4%, 6%, and 9% milk fat found that the higher-fat ice creams were rated creamier and smoother, and were better protected against heat-shock damage to smoothness. Other research found that destabilized fat was linked with less perceived iciness and slower drip-through. However, fat is only one part of the texture: ice-crystal structure, air content, mix viscosity, and freezing conditions also affect hardness, melting, and sensory texture. A study using coconut- and cashew-milk combinations measured fat content and antioxidant activity, but did not establish how fat changed texture.
