Reheated rice can cause food poisoning when Bacillus cereus spores survive cooking, then multiply while cooked rice cools or is stored warm. Some strains produce toxins, and reheating may not reliably remove toxins that have already formed. Prevent this by keeping rice hot, or cooling it quickly and refrigerating it within 2 hours; avoid leaving it warm for extended periods.
Raw rice can contain heat-resistant Bacillus cereus spores. Cooking may destroy ordinary bacterial cells but does not necessarily destroy these spores. If cooked rice is cooled slowly or kept at warm temperatures, the spores can germinate and the bacteria can multiply. This can lead to vomiting-type or diarrheal food poisoning through toxin production. Reheating is not a dependable way to make poorly stored rice safe: it may not eliminate heat-resistant spores, and the emetic toxin cereulide is described as highly stable and unlikely to be inactivated by food processing. The safer approach is to minimize the time rice spends warm: keep it hot above 63°C, or cool it quickly and refrigerate it within 2 hours. Do not store cooked or fried rice under warm conditions, particularly in the 15–50°C range. These recommendations come mainly from reviews and laboratory or observational studies summarized only in their abstracts, so they support practical prevention but do not establish that every reheated-rice illness is caused by B. cereus.
