Sous-vide temperature control can make meat more tender and less hard than conventional cooking, especially under lower-temperature conditions, while preserving moisture. However, texture depends on both temperature and holding time: higher temperatures can increase connective-tissue breakdown and muscle-fiber shrinkage, and the best setting varies by meat type.
