Longer steeping and higher temperatures generally extract more tea compounds, but they do not always improve flavor. The lemon verbena study found that these conditions increased extraction of many phenolic and aromatic compounds, while some compounds showed degradation at higher temperatures and longer times. It also found that bitterness could increase, so the best flavor may occur before maximum extraction.
