生地は冷蔵庫でどのくらいまで安全に低温発酵できる?

Food Safety & Storage

Research has not established one universal safe maximum for cold-proofing dough in a home refrigerator. For the specific refrigerated steamed-bread dough studied, 24–48 hours was suitable for quality, while 72 hours caused noticeable quality problems; this should not be treated as a general food-safety guarantee for every dough.

The closest study tested refrigerated, selenium-enriched Chinese steamed-bread dough and found its best reported quality after 24–48 hours. After 72 hours, the dough lost strength and stretch, and the baked bread showed separation between crust and crumb. Other research describes mould during refrigerated storage or microbial contamination in dough, but does not establish a single safe cold-proofing limit for ordinary homemade dough. Keep dough continuously cold, use a clean covered container, and discard it if it develops mould, an unusual odor, or other spoilage signs. A question these papers can answer is: "How does Refrigeration for 24-48 h affect dough extensibility?"
