冷凍焼けはなぜ起こり、包装でどう防げる?

Food Safety & Storage

Freezer burn is mainly associated with moisture moving out of frozen food and with temperature changes during storage. Research indicates that packaging can help by limiting moisture loss and buffering temperature fluctuations, but the package must be appropriate for the food and storage conditions.

Frozen food quality declines when water migrates or is lost, and repeated warming and cooling can worsen these changes. A well-chosen package can slow moisture transfer, while packaging combined with trapped air can reduce the effect of temperature fluctuations. Keeping the freezer cold and steady remains important because one study found storage temperature mattered more than the package for ice cream quality.
