炸油重复使用后会如何劣化?

Cooking Techniques & Heat

With repeated frying, oil generally becomes darker and thicker and accumulates oxidation products, free fatty acids, polar compounds, dimers, and polymers. How quickly this happens depends on the oil, temperature, food, and frying conditions, so there is no single safe reuse count established by this research.

Research describes several overlapping forms of degradation: water from food can promote hydrolysis, oxygen and heat promote oxidation, and continued heating can promote polymerization. In practical terms, reused oil may darken and become more viscous, while chemical measures of deterioration rise. Studies also found that different oils behave differently, so appearance alone is not a complete test of quality; changes in odor, smoking, foaming, or excessive thickness are useful warning signs, but the research does not establish a universal household cutoff.
