What temperature does the Maillard reaction really need?

There is no single temperature that the Maillard reaction “needs.” In the supplied studies, Maillard-related changes occurred in model systems at 40–60°C, while heating at 120°C produced Maillard reaction products and baking at 200–250°C strongly affected bread-crust products.
