What temperature does the Maillard reaction really need?

There is no single temperature that the Maillard reaction “needs.” In the supplied studies, Maillard-related changes occurred in model systems at 40–60°C, while heating at 120°C produced Maillard reaction products and baking at 200–250°C strongly affected bread-crust products. Temperature mainly changes the reaction rate and the products formed; time, moisture or water activity, pH, and the ingredients also matter.

The clearest low-temperature evidence comes from a dry model system in which acetyllysine–glucose degradation was measured at 40, 50, and 60°C, with greater loss at higher temperatures. This shows that Maillard chemistry can occur below typical browning temperatures, although the experiment measured chemical degradation and color development rather than defining a universal starting temperature. Other supplied abstracts examined model systems at 120°C or bread baked at 200–250°C, so those results should not be treated as a threshold. In practical cooking, visible browning generally depends on the food’s moisture, pH, composition, and heating time—not temperature alone.
