添加蛋白质会改变烘焙食品的营养和口感吗?

Nutrition & Health

Yes. Research shows that adding protein-rich ingredients can improve a baked product’s protein and other nutritional measures, but it can also change texture. The direction is not universal: duckweed protein made several products harder, while Sacha inchi flour made cookies softer and Sacha inchi oil made them firmer.

The clearest described studies found nutritional changes alongside texture changes. Legume flours raised biscuit protein and antioxidant measurements. Duckweed protein raised protein content in snack bars, roll breads, and muffins and significantly increased hardness. In another cookie study, Sacha inchi flour increased protein and reduced hardness, while Sacha inchi oil increased firmness. So, for home baking, the result depends on the protein ingredient, amount, and recipe; research has not established one texture change that applies to every baked good.
