Is sourdough bread easier to digest than regular bread?

Sourdough bread may be easier to digest in some limited laboratory tests, but the supplied evidence does not establish that it is generally easier to digest than regular bread in people. Another study found that sourdough breads had in-vitro protein digestibility within the range of conventional sourdough breads, but its abstract does not show that sourdough was superior to baker’s-yeast bread. A separate study produced a gluten-free bread using sourdough biotechnology and reported high in-vitro protein digestibility, but this was a specially treated gluten-free product and cannot be generalized to ordinary sourdough. These are mainly laboratory findings, not evidence that people experience fewer digestive symptoms.
