Salt appears to suppress bitterness mainly through interactions at the peripheral taste system, especially involving the sodium cation, rather than simply changing a person’s judgment of the flavor. The effect is selective: sodium salts reduced the bitterness of some compounds, but not others, and the result depended on the particular bitter substance and, in some evidence, the taster’s age.
The most direct supplied study found that sodium salts suppressed several bitter tastes, while magnesium sulfate bitterness was not reduced. Changing the sodium salt’s anion did not alter bitterness suppression, whereas replacing sodium with lithium retained suppression and potassium did not; this points to a role for the cation and supports a peripheral taste mechanism. The study also found that suppressing bitterness in a bitter–sweet mixture increased perceived sweetness. A separate study found that sodium gluconate and MSG were effective for only some bitter compounds, with weaker and more variable blocking in children, so salt does not act as a universal bitterness blocker.
